  • 2 chicken breasts, cut into 1” pieces
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • ⅔ cup chicken broth
  • ½ cup full-fat sour cream
  • 3 tbsp olive oil, divided
  • 1 tbsp butter
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • Flour, for dredging
  • 1 tbsp Dijon mustard

Instructions

  1. Season chicken pieces with garlic powder, salt, pepper, and coat lightly in flour.
  2. In a skillet over medium heat, add 2 tablespoons of olive oil and sear the chicken until browned; set aside.
  3. In the same skillet, melt butter with remaining olive oil and sauté mushrooms and onions until golden brown.
  4. Stir in Dijon mustard and minced garlic; cook for about a minute until fragrant.
  5. Pour in chicken broth to deglaze the pan, returning the chicken to the skillet for an additional 2 minutes.
  6. Gently mix in sour cream over low heat until warmed through; adjust seasoning if necessary before serving.
