  • 2 sheets puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese (or cottage cheese)
  • 1/2 cup grated Parmesan cheese (or Pecorino Romano)
  • 1 egg, beaten (for egg wash)
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp olive oil (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté the spinach in olive oil until wilted. Allow it to cool slightly before mixing with ricotta, Parmesan cheese, garlic powder, salt, and pepper in a bowl until smooth.
  3. Roll out the thawed puff pastry on a clean surface and cut into squares (4–6 per sheet).
  4. Place 1–2 tablespoons of filling in the center of each square. Fold into triangles or rectangles and seal edges with a fork.
  5. Brush the tops with beaten egg for a golden finish.
  6. Bake for 20–25 minutes until puffed and golden brown. Cool for 5 minutes before serving.
