  • 2½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1¼ cups light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter (for coating)
  • 2 tablespoons apple cider (for coating)
  • ¾ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)
  • 1 cup powdered sugar (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • 12 tablespoons apple cider (for glaze)

Instructions

  1. Pour the apple cider into a small saucepan. Heat over medium-high until it gently boils or simmers. Continue cooking until it reduces to ¼ cup (59 ml), about 15–20 minutes. Remove from heat and let cool to room temperature.
  2. In a saucepan, melt 20 tablespoons of butter over low heat. Once foaming, stir frequently until it smells nutty and fragrant. Look for lightly toasted bits at the bottom; this indicates it's ready. Pour into a heat-safe bowl to cool for about 15 minutes; then refrigerate for another 15 minutes.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, cornstarch, apple pie spice, and salt. Make sure everything is well combined.
  4. In a large mixing bowl, whisk the cooled browned butter with light brown sugar and granulated sugar until combined. Add in the egg, egg yolk, reduced apple cider, and vanilla extract; mix until smooth.
  5. Gradually stir dry ingredients into wet ingredients in two batches until just combined. Allow dough to rest while preheating your oven to 375°F (190°C).
  6. Line a baking sheet with parchment paper. Using a cookie scoop, place cookie dough balls about 3 inches apart on the sheet. Bake for 9–11 minutes until edges are set and centers are slightly puffed.
  7. Let cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  8. In one bowl, whisk melted butter with additional apple cider. In another, combine granulated sugar with ground cinnamon.
  9. Brush one side of each cookie with the apple cider butter mixture. Immediately press that side into the cinnamon sugar. Flip cookie over and coat bottom side as well. Transfer coated cookies back onto cooling rack.
  10. In a bowl, whisk powdered sugar with vanilla extract and apple cider until smooth. Drizzle over cooled cookies before serving.
