  • 1 cup oats (ground into flour)
  • 1/2 cup rice flour
  • 4 tbsp cornstarch
  • 2 tbsp coconut sugar
  • 1 tbsp ground flax seeds
  • 1 1/2 cups plant-based milk
  • 3 apples (peeled and chopped)
  • 1 tsp cinnamon
  • 1 small banana
  • 1/2 tbsp lemon juice
  • 1/2 tsp baking powder
  • Oil (for frying)

Instructions

  1. In a mixing bowl, combine the oat flour, rice flour, cornstarch, coconut sugar, flax seeds, and baking powder. Mix well.
  2. In a blender, blend together the plant-based milk, banana, lemon juice, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until just combined. Let it rest for 5 minutes.
  4. Heat oil in a non-stick skillet over medium heat. Pour in about 1/4 cup of batter per crepe, cooking for 2-4 minutes on one side until edges lift easily before flipping to cook the other side for another 1-2 minutes.
  5. In another pot, combine apple filling ingredients without heat first; then bring to a boil and simmer until apples are tender.
  6. Serve by placing apple filling in each crepe and rolling them up.
