  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In another bowl, beat softened butter with granulated and brown sugars until fluffy.
  4. Add egg and vanilla; mix until combined.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Gently fold in chopped apple.
  7. In a separate bowl, combine sugar and cinnamon for rolling.
  8. Scoop dough into balls, roll in cinnamon-sugar mixture, and place on the baking sheet.
  9. Bake for 8–10 minutes or until golden around the edges.
  10. Allow cookies to cool before transferring to a wire rack.
