  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef stock
  • Fresh thyme sprigs

Instructions

  1. Sear the lamb shanks in olive oil over medium-high heat until browned (5-7 minutes), seasoning with salt and pepper.
  2. Remove the shanks, sauté sliced onions until translucent (about 3 minutes), add minced garlic, then stir in chopped carrots and celery for about 5 minutes.
  3. Mix in tomato paste, pour in apple vinegar while scraping the pot's bottom. Add beef stock and bring to a simmer.
  4. Return lamb shanks to the pot, add thyme, cover, reduce heat to low, and simmer gently for about 2 hours until tender.
  5. Serve with sauce spooned over the top along with vegetables.
