  • ½ cup uncooked quinoa
  • 1 cup vegetable broth or water
  • 5 oz arugula (about 56 cups)
  • 1 can chickpeas (15 oz), drained
  • 2 medium avocados, cubed
  • 1 orange, chopped
  • ½ cup slivered almonds
  • ½ cup crumbled feta cheese
  • ¼ cup olive oil
  • 2 tbsp orange juice
  • 2 tbsp lemon juice
  • 1 clove garlic, crushed
  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • Salt & pepper to taste

Instructions

  1. Cook quinoa: Bring quinoa and vegetable broth to a boil in a saucepan. Cover and simmer for about 15-20 minutes until liquid is absorbed. Fluff with a fork and let sit.
  2. Toast almonds: Spread slivered almonds on a sheet pan and toast under the broiler for about 2-3 minutes until golden brown.
  3. Make dressing: Whisk together olive oil, orange juice, lemon juice, garlic, dijon mustard, maple syrup, salt, and pepper in a bowl until smooth.
  4. Assemble salad: In a large bowl, mix arugula with half the dressing. Add quinoa, chickpeas, oranges, avocado, toasted almonds, and feta cheese. Drizzle remaining dressing on top.
  5. Serve: Toss gently to combine and enjoy!
