  • 4 cups (1 litre) high-proof alcohol (such as Everclear)
  • 4 ⅔ cups (1.1 litres) water
  • 2.43 lbs (1.1 kg) white sugar

Instructions

  1. Thoroughly wash the lemons and peel only the yellow zest using a vegetable peeler.
  2. Place lemon peels in a large glass jar and cover completely with high-proof alcohol. Seal tightly and let infuse in a dark place for 25 days.
  3. After infusion, strain out the peels using a fine mesh strainer over a bowl to keep the infused alcohol.
  4. Prepare simple syrup by heating water until small bubbles form, then add sugar and stir until dissolved.
  5. Allow syrup to cool slightly before combining with lemon-infused alcohol; mix well.
  6. Cool completely at room temperature before bottling in glass containers.
  7. Refrigerate for several hours before serving chilled.
