  • 34 lbs organic chicken (skin removed)
  • 23 Tbsp Jamaican Green Seasoning
  • 2 Tbsp Jamaican curry powder
  • 1 tsp sea salt
  • 4 Tbsp extra virgin olive oil
  • 1 can full-fat coconut milk
  • 2 medium russet potatoes (peeled and cubed)
  • 2 medium carrots (peeled and chopped)
  • 3 garlic cloves (minced)
  • 1 cup organic chicken stock (low-sodium)

Instructions

  1. Clean the chicken pieces under cold water and pat dry.
  2. In a large bowl, combine the chicken with Jamaican Green Seasoning, curry powder, sea salt, and smoked paprika. Let marinate for at least 30 minutes.
