  • 3 pounds chuck roast
  • 2 pounds short ribs (bone-in)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • Fresh cilantro (for garnish)
  • Fresh lime juice (for garnish)
  • 2 tablespoons avocado oil
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 1 carrot (cut in half crosswise, then cut in half)
  • 2 bay leaves
  • 2 teaspoons chicken bouillon
  • 12 teaspoons chili powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Chop chuck roast into 2-inch chunks and pat dry. Season with salt and pepper.
  2. Heat avocado oil in a large Dutch oven over medium-high heat and sear the meat until browned on all sides.
  3. In the same pot, add seared meat, onion, garlic, carrots, bay leaves, and dried peppers. Pour in beef broth and cover with water.
  4. Stir in chicken bouillon, oregano, cumin, and salt. Bring to a boil and skim off impurities after 30 minutes.
  5. Blend softened peppers, onion, garlic, and carrots until smooth; return mixture to the pot.
  6. Simmer covered for about 3 hours until the meat is tender.
  7. Skim off excess grease before serving; garnish with cilantro and lime juice.
