  • 1 tablespoon salted butter
  • 1 medium onion
  • 2 medium carrots
  • 2 celery ribs
  • 4 oz diced turkey strips
  • 1 lb ground beef
  • 2 cans San Marzano plum tomatoes (28 oz each)
  • 3 tablespoons tomato paste
  • 3/4 cup apple cider vinegar
  • 1/2 cup beef or chicken stock
  • 1 cup whole milk
  • Salt & black pepper to taste
  • Freshly grated Parmigiano Reggiano (for serving)
  • 1 lb dried pappardelle pasta

Instructions

  1. Finely chop the onion, carrots, and celery to create the soffritto.
  2. In a large pot, heat olive oil and butter over medium heat. Add the turkey strips and cook until browned.
  3. Stir in the soffritto mixture and cook for an additional few minutes.
  4. Add ground beef; cook until browned and liquid evaporates.
  5. Pour in the apple cider vinegar; cook off for several minutes before adding tomato paste.
  6. Mix in the San Marzano tomatoes and broth; add seasoning and cheese rind. Cover and simmer on low for 4–5 hours.
  7. In the final hour, stir in whole milk.
  8. Cook pappardelle according to package instructions; combine with sauce before serving.
