  • 1 cup light brown sugar (packed)
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 2 teaspoons vanilla extract
  • 3/4 cup maple syrup
  • 1 1/2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/4 cup confectioners' sugar

Instructions

  1. Preheat the oven to 400°F (200°C) and coat a nonstick donut pan with spray.
  2. In a bowl, mix flour, baking powder, pumpkin pie spice, salt, and baking soda.
  3. In another bowl, beat melted butter and brown sugar until combined. Add eggs one at a time, then mix in pumpkin puree and vanilla.
  4. Gradually combine the dry ingredients into the wet mixture until just incorporated.
  5. Scoop batter into the donut pan and bake for 10–12 minutes until slightly browned.
