  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard settings. Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the overripe bananas until smooth. Mix in canola oil, milk, both sugars, eggs, and vanilla extract until well combined.
  3. Sift together the flour, baking powder, and salt into the wet mixture. Stir gently until just combined; some lumps are okay.
  4. Pour the batter into the prepared loaf tin and bake for about 45–55 minutes or until golden brown and a skewer inserted in the center comes out clean. Let cool in the tin for about 10 minutes before transferring to a wire rack.
