Ingredients

Scale
  • 2/3 cup packed brown sugar
  • 4.5 tablespoons unsalted butter
  • About 3 ripe bananas, sliced
  • 1/3 cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 1 ½ teaspoons vanilla extract
  • 1/3 cup Greek yogurt (or sour cream)
  • 2 large eggs
  • 2 overripe bananas, mashed (about 1 cup)
  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • Dash of salt
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an appropriate cake pan (8 x 8 or round).
  2. Prepare the caramel topping by spreading brown sugar in the pan, adding butter pieces, and melting in the oven for about 5 minutes. Mix well and layer banana slices on top.
  3. In a separate bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  4. Cream together softened butter and sugar until light; add eggs and vanilla, then mix in yogurt and mashed bananas.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Pour batter over the bananas in the pan and bake for approximately 30 minutes at 350°F before reducing heat to 325°F for an additional 25–35 minutes until a toothpick comes out clean.
  7. Let cool briefly before inverting onto a serving plate.
