  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • Salt and black pepper to taste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth

Instructions

  1. Brown the beef: Heat oil in a large pot over medium-high heat. Add beef chunks in batches, browning all sides for about 5–7 minutes. Set aside.
  2. Sauté aromatics: In the same pot, add chopped onions, cooking until translucent (about 5 minutes). Stir in minced garlic and grated ginger; cook for another minute.
  3. Add spices: Incorporate curry powder, cumin, turmeric, cayenne (if using), smoked paprika, ground coriander, salt, and black pepper. Toast spices for about 2 minutes.
  4. Build sauce: Pour in coconut milk and tomato paste; stir to combine. Return browned beef to the pot and add broth. Bring to a simmer, then reduce heat to low.
  5. Cook until tender: Cover loosely and let simmer gently for about 2–3 hours or until beef is fork-tender.
