  • 3 medium beets, roasted and diced
  • 2 Persian cucumbers, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red apple vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

  5. Pour the dressing over the salad mixture and toss gently to coat.
