- 2.25 cups water
- 0.75 tsp salt
- 2 chicken breasts (cut into 1-inch chunks)
- 0.75 lemon juice
- 1 tbsp olive oil
- 0.5 tsp paprika
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp salt
- 0.5 tsp pepper
- 1 tbsp honey
- 1 cup cucumber (diced into 1/2-inch pieces)
- 1 cup tomatoes (diced into 1/2-inch pieces)
- 1 cup bell pepper
- 0.25 red onion
- 0.5 cup black olives
- 0.25 cup mint
- 0.25 cup parsley
- 2.5 tbsp olive oil
- 0.75 lemon juice
- 0.25 tsp salt
- pinch red pepper flakes
- 0.5 cup feta (crumbled into 1/4-inch chunks)
- 0.5 cup greek yogurt
- 1 handful pistachios
- Start by rinsing the quinoa under cold water to remove any bitterness.
- In a medium saucepan, combine quinoa with water and salt.
- Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
- Fluff with a fork and set aside.
- In a large mixing bowl, whisk together lemon juice, olive oil, paprika, oregano, garlic powder, salt, pepper, and honey.
- Add chicken pieces to the marinade and toss until well coated.
- Let it marinate for at least 10 minutes while you prep other ingredients.
- Heat a non-stick skillet over medium-high heat with olive oil.
- Add marinated chicken chunks in a single layer; do not overcrowd.
- Cook for about 6-8 minutes on each side until cooked through.
- In each serving bowl, place a base of cooked quinoa.
- Top with cooked chicken pieces followed by diced cucumber, tomatoes, bell pepper, red onion, olives, mint, parsley, feta cheese, and Greek yogurt.
- Drizzle with olive oil and lemon juice; sprinkle with salt and red pepper flakes if desired.
