  • 250 g caster sugar

  • 200 g icing sugar
  • 2 tablespoons freshly squeezed orange juice

Instructions

  1. Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10-inch baking tin with baking paper.
  2. In a large bowl, whisk together the softened butter and caster sugar until light and fluffy. Stir in the vanilla extract.
  3. Gradually add the eggs, one at a time, mixing well after each addition. Fold in the self-raising flour and milk until you have a smooth batter, then stir in the orange zest.
  4. Pour the batter into your prepared tin and spread it evenly. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  5. Let the cake cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely.
  6. For the drizzle icing, mix icing sugar with freshly squeezed orange juice and additional zest if desired. Once the cake is cool, pour the icing over the top.
