Instructions

  2. Season the chuck roast generously with salt and pepper.
  3. Sear the roast in a skillet over medium-high heat until browned on both sides (about 3-4 minutes per side).
  4. Place the seared roast in the crock pot and layer with carrots, potatoes, onions, and garlic. Sprinkle thyme and rosemary on top.
  5. Pour enough beef broth over the vegetables to cover them while leaving some roast exposed.
