  • 6 tbsp unsalted butter
  • 32 oz full-fat cream cheese
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/3 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup granulated sugar for caramel sauce
  • 5 tbsp unsalted butter for caramel sauce
  • 1/2 cup heavy cream for caramel sauce
  • 1 tsp vanilla extract for caramel sauce
  • 1 tsp salt for caramel sauce
  • Optional: Flaky sea salt for garnish

Instructions

  1. Prepare the salted caramel sauce by melting sugar until golden, then adding butter and warmed cream. Stir in vanilla and salt; let cool.
  2. Preheat oven to 325°F (160°C). Crush Biscoff cookies and mix with melted butter; press into a springform pan.
  3. Beat cream cheese until smooth; gradually add sugar and vanilla. Mix in eggs one at a time, then stir in sour cream, heavy cream, cornstarch, and cooled caramel.
