- 1/2 cup 2% milk
- 1/2 cup canola oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- 1/3 cup granulated sugar for streusel topping
- 1/3 cup all-purpose flour for streusel topping
- 3 tablespoons salted butter (softened) for streusel topping
- Preheat your oven to 350ºF and grease a 9"x5" loaf pan.
- In a medium bowl, whisk together sugar, milk, oil, egg, and vanilla until smooth.
- In another bowl, combine flour, baking powder, and salt; gradually add to wet ingredients until just mixed.
- Gently fold in fresh blueberries and pour batter into the prepared loaf pan.
- For the streusel topping, mix sugar, flour, and softened butter until crumbly; sprinkle on top of the batter.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack.
