  • 3/4 cup granulated sugar
  • 1/2 cup 2% milk
  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar for streusel topping
  • 1/3 cup all-purpose flour for streusel topping
  • 3 tablespoons salted butter (softened) for streusel topping

Instructions

  1. Preheat your oven to 350ºF and grease a 9"x5" loaf pan.
  2. In a medium bowl, whisk together sugar, milk, oil, egg, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, and salt; gradually add to wet ingredients until just mixed.
  4. Gently fold in fresh blueberries and pour batter into the prepared loaf pan.
  5. For the streusel topping, mix sugar, flour, and softened butter until crumbly; sprinkle on top of the batter.
  6. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cooling for about 10 minutes before transferring to a wire rack.
