  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter (cubed)
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan with parchment paper.
  2. In a large bowl, mix together the flour, baking powder, salt, brown sugar, regular sugar, and lemon zest.
  3. Incorporate the cold butter until the mixture resembles coarse crumbs.
  4. Mix in the eggs and vanilla until well combined.
  5. Press two-thirds of the mixture into the bottom and sides of the prepared pan.
  6. In another bowl, blend mascarpone cheese, cream cheese, sugar, corn starch, and vanilla until smooth; add eggs one at a time.
  7. Pour half of the cheesecake mixture into the crust, sprinkle with blueberries, then layer with remaining cheesecake mixture and top with more blueberries and crumbs.
  8. Bake for about 65-75 minutes or until golden brown; use a toothpick to check for doneness.
