  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • pinch of salt
  • 1 large egg
  • 1 teaspoon cold water
  • coarse sanding sugar (for garnish)

Instructions

  1. Prepare the blueberry filling by cooking blueberries, sugar, cornstarch, lemon juice, and salt in a large pot over medium-high heat until thickened. Allow to cool.
  2. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  3. Roll out pie dough to 1/8-inch thickness and cut into circles using a large round cutter.
  4. Spoon cooled filling onto each circle, fold over, and seal edges with a fork.
  5. Brush with egg wash and cut slits for venting.
  6. Bake for 20-25 minutes until golden brown.
  7. Cool slightly before serving.
