  • 41/2 – 5 cups vanilla ice cream
  • 21/2 cups blueberry sorbet
  • 68 shortbread cookies
  • 1 tablespoon unsalted butter (softened)
  • 3 tablespoons freeze-dried blueberries (pulsed into powder) or blueberry gelatin powder

Instructions

  1. Prepare an 8 x 8 square baking dish by lining it with parchment paper.
  2. In a food processor, pulse shortbread cookies into fine crumbs and mix with softened butter. Press this mixture firmly into the bottom of the prepared dish and freeze for 20 minutes.
  3. Crush additional shortbread cookies and combine them with softened butter and blueberry powder; set aside.
  4. Soften vanilla ice cream for about 15-20 minutes, then spread 2 cups over the crust and freeze until firm (10-20 minutes).
  5. Spread blueberry frozen yogurt over the vanilla layer and freeze again for another 10 minutes if needed.
  6. Top with crumbled mixture and cover; freeze for at least 3-4 hours or overnight before serving.
