1 cup Greek yogurt
1/2 cup blueberries
2 tbsp honey or maple syrup
1 tsp lemon juice
1/2 tsp vanilla extract
1 tsp cornstarch (optional)
Instructions
In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for about 5 minutes until the blueberries soften.
If desired, dissolve cornstarch in a little water and stir it into the blueberry mixture to thicken. Remove from heat and let cool completely.
In a mixing bowl, combine Greek yogurt and vanilla extract until smooth. Adjust sweetness with additional honey or maple syrup if needed.
Spoon the yogurt mixture into silicone molds or mini muffin tins, filling them three-quarters full. Add a spoonful of cooled blueberry compote on top of each portion and swirl gently with a toothpick.
Place molds in the freezer for at least 3 hours until solid.
Remove frozen bites from molds and store in an airtight container in the freezer.
