  • 4 cups chicken stock
  • 1 cup fresh plum tomatoes, chopped
  • 2 cinnamon sticks
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 3 bay leaves
  • teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. Gather all ingredients on the countertop for easy access.
  2. In a Dutch oven over medium-high heat, sear the lamb shanks in oil until browned on all sides (4–5 minutes per side). Remove from pot.
  3. In the same pot, sauté onion, celery, and carrots for about 5–7 minutes until softened. Add minced garlic and spices; cook for an additional minute.
  4. Pour in chicken stock and stir in tomatoes along with herbs and seasonings.
  5. Return the lamb shanks to the pot, ensuring they are partially submerged in liquid. Bring to a boil then reduce heat to low. Cover and simmer for 2–3 hours until tender.
  6. Let rest before serving with your choice of sides such as mashed potatoes or roasted root vegetables.
