  • 20g cornstarch
  • 20g unsalted butter
  • 250ml warm milk
  • 50ml heavy cream
  • 75g sugar
  • 7g instant yeast
  • 40g active sourdough starter
  • 3g salt
  • 165g all-purpose flour (T45)
  • 385g bread flour (grue)
  • 70g unsalted butter, softened
  • 130g dark chocolate chips
  • 1 egg for glaze
  • 2 tablespoons sugar for syrup
  • 2 tablespoons boiling water

Instructions

  1. Prepare the vanilla cream by heating milk with vanilla extract. Whisk egg yolks and sugar until pale; combine with cornstarch. Gradually add hot milk while whisking. Cook until thickened; mix in butter and refrigerate for at least 4 hours.
  2. Make the brioche dough by combining warm milk, cream, sugar, and yeast in a stand mixer bowl. Add flours and salt; mix to form a smooth dough with softened butter.
  3. Roll out the dough into a rectangle; spread chilled vanilla cream and sprinkle chocolate chips. Fold and cut into strips; twist each strip and spiral into shape.
  4. Let rise on a baking sheet before brushing with egg wash. Bake until golden brown.
