  • 5 Tablespoons Butter
  • ¼ teaspoon Vanilla Extract
  • 10 Cups Mini vegan marshmallows (divided)
  • 6 Cups Rice Krispies Cereal (cinnamon sugar flavored, see note)
  • ½ teaspoon Sea Salt (fine grain)
  • ½ Can Dulce de Leche

Instructions

  1. Prepare a 9×9-inch pan by spraying it with non-stick spray and lining it with parchment paper.
  2. In a large pot over medium heat, melt the butter until browned, being careful not to burn it.
  3. Remove from heat and stir in 8 cups of mini vegan marshmallows and salt until melted and smooth.
  4. Add vanilla extract, then pour the melted mixture over the rice krispies in a large bowl and mix well.
  5. Fold in the remaining mini vegan marshmallows while still warm.
  6. Press half the mixture into the prepared pan, spread dulce de leche evenly, then top with the remaining rice krispies mixture.
  7. Let cool completely at room temperature before slicing into squares.
