  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Make the pie dough by browning the butter and combining it with flour, salt, chilled water, and vinegar. Chill before rolling out.
  2. Preheat your oven to 425°F (218°C).
  3. Roll out the dough and place it in a pie pan. Prepare the fruit filling by mixing peaches, strawberries, sugar, lemon juice, cornstarch, and salt.
  4. Assemble the pie with a lattice top using the second round of dough.
  5. Bake for about 25 minutes at high temperature, then lower to 350°F (175°C) for an additional 40-50 minutes until golden brown.
