  • 2 1/4 cups granulated sugar
  • 1 1/2 cups light brown sugar (packed)
  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat oven to 350°F. Grease two 8×8 baking pans with butter or cooking spray and line with parchment paper.
  2. In a bowl, mix melted butter, granulated sugar, and brown sugar with a hand mixer on medium speed until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in vegetable oil and vanilla extract until combined.
  5. In another bowl, combine flour, cocoa powder, and salt. Gradually add this mixture to the wet ingredients until smooth.
  6. Split the batter evenly between the prepared pans and bake for 30-40 minutes or until a toothpick comes out barely clean.
  7. Cool brownies in pans for about 10 minutes before lifting them out using parchment paper onto a cooling rack.
  8. Once cooled completely, spread softened ice cream over one layer of brownie in its pan and top with the second brownie layer. Wrap and freeze for at least six hours.
  9. When ready to serve, let thaw slightly before cutting into squares.
