  • 1 large burrata ball
  • 45 ripe plums, halved and pitted
  • ½ cup pistachios, chopped
  • 23 sprigs fresh thyme, leaves only
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt, to finish
  • Cracked black pepper, to taste

Instructions

  1. Preheat the oven to 400F (200C). Arrange halved plums cut-side up on a baking tray lined with parchment paper.
  2. Drizzle the plums with olive oil and honey (if using) and roast for 20-25 minutes until soft and caramelized.
  3. Allow the plums to cool slightly before plating.
  4. Place the burrata in the center of a serving plate, spoon roasted plums around it.
  5. Sprinkle pistachios and thyme leaves over the top, drizzle with more olive oil, then season with salt and pepper.
  6. Serve immediately with toasted sourdough or artisan crackers.
