  • 12 oz Smoked Sausage (such as chicken or turkey sausage)
  • 1 red Bell Pepper (diced)
  • 1 green Bell Pepper (diced)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 cup long-grain Rice (rinsed)
  • 1 ½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. In a large skillet over medium heat, add olive oil. Once hot, add sliced smoked sausage and cook until browned, about 5–7 minutes.
  2. Add diced onion, red bell pepper, green bell pepper, and minced garlic to the skillet. Sauté until softened, approximately 3–4 minutes.
  3. Stir in rinsed rice and Cajun seasoning. Pour in chicken broth, mixing well.
  4. Bring to a boil, then reduce heat to low, cover with a lid, and simmer for about 15 minutes until the rice is cooked through.
  5. Fluff rice with a fork and season with salt and pepper to taste before serving hot.
