  • 5 ounces baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1 cup mini fresh mozzarella balls
  • 1/3 cup plain Greek yogurt (for dressing)
  • 2 tablespoons balsamic vinegar (for marinade)
  • 1 tablespoon pesto (for marinade and dressing)
  • 1 teaspoon olive oil
  • 1 teaspoon honey
  • Kosher salt and black pepper to taste
  • 1/4 cup low fat milk (for dressing)
  • 1 1/2 tablespoons pesto (for dressing)
  • 2 tablespoons shredded parmesan cheese (for dressing)
  • 1 tablespoon vinegar (for dressing)
  • 1/4 teaspoon granulated garlic (for dressing)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. In a bowl, whisk together the marinade ingredients: balsamic vinegar, pesto, olive oil, honey, salt, and pepper.
  2. Season chicken breasts with salt and pepper. Place them in a gallon-size bag, pour in the marinade, seal the bag while removing excess air, and refrigerate for at least one hour or overnight.
  3. Preheat your grill to medium-high heat and grill the chicken for 4–6 minutes per side until cooked through. Let it rest for 5 minutes before slicing.
  4. Prepare the dressing by whisking together Greek yogurt, low-fat milk, pesto, parmesan cheese, vinegar, garlic powder, salt, and pepper until smooth.
  5. On a serving platter or bowl, layer baby spinach first; then add cherry tomatoes, mozzarella balls, and sliced chicken. Drizzle with dressing.
