  • 5 strips of thinly sliced turkey
  • 8 oz farfalle (bow tie pasta)
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F. Spread turkey slices on a foiled baking sheet and bake for 10-12 minutes until crispy.
  2. Cool the turkey on a cutting board and dice it into preferred sizes.
  3. Cook farfalle according to package instructions in boiling water with a drop of olive oil; drain and rinse under cool water.
  4. Whisk together vinaigrette ingredients in a small bowl.
  5. In a large mixing bowl, combine cooked pasta with diced turkey, halved tomatoes, mozzarella balls, basil, and vinaigrette. Toss until well mixed.
