  • 1 Tbsp lemon juice
  • 1/2 cup water
  • ⅓ cup packed brown sugar
  • 1 ½ tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 Tbsp cornstarch
  • 3 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup unsalted butter (room temperature, 2 sticks)
  • 1 1/4 cups brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Caramel sauce

Instructions

  1. Prepare the apple filling: Cook diced apples with lemon juice, water, brown sugar, cinnamon, nutmeg, and cornstarch until softened. Let cool.
  2. Mix dry ingredients: Whisk together flour, cornstarch, baking soda, cinnamon, and salt.
  3. Cream butter and sugars: Beat butter with brown and granulated sugars until fluffy. Add eggs one at a time and mix in vanilla.
  4. Combine mixtures: Gradually add dry ingredients to wet mixture; fold in cooled apple filling gently.
  5. Bake: Preheat oven to 350°F (175°C). Drop spoonfuls of dough on parchment-lined baking sheets; bake for 15-16 minutes until edges are golden.
