  • 1 Tbsp lemon juice
  • 1/2 cup water
  • 1/3 cup brown sugar
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 Tbsp cornstarch
  • 3 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1 1/4 cups brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Caramel sauce for topping

Instructions

  1. Prepare the apple filling by cooking diced apples, lemon juice, water, brown sugar, cinnamon, and cornstarch in a pot until tender. Let cool.
  2. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a mixing bowl, cream together butter and sugars until fluffy. Add eggs one at a time followed by vanilla.
  4. In another bowl, whisk flour, cornstarch, baking soda, cinnamon, and salt; gradually mix into wet ingredients.
  5. Scoop dough onto baking sheets, creating an indentation for the apple filling. Fill each indentation with apple mixture and drizzle caramel on top.
  6. Bake for about 16 minutes until edges are golden. Cool before serving.
