  • 200g all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • 115g unsalted butter, softened
  • 100g brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200g finely grated carrots
  • 150g chopped pitted dates
  • 60ml coconut milk

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line your cake pan with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time followed by vanilla extract.
  5. Gradually add dry ingredients alternately with coconut milk; mix until just combined.
  6. Fold in grated carrots and chopped dates.
  7. Pour batter into the prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
