Carrot Ginger Chickpea Salad is a vibrant, nutritious dish that brings together fresh ingredients and zesty flavors, making it an ideal choice for a light lunch, side at a dinner party, or meal prep option. The natural sweetness of grated carrots pairs beautifully with the warm spice of ginger, while the creamy tahini dressing adds depth and richness. Each bite offers delightful crunch from the vegetables and satisfying protein from chickpeas.

  • Two 15-ounce cans of chickpeas, rinsed, drained, and patted dry
  • 3 cups of finely grated carrots (about 45 large carrots)
  • ½ medium red onion, very finely diced
  • 2 celery stalks, finely chopped
  • ½ cup of loosely packed, chopped fresh cilantro
  • ½ cup of good-quality, runny tahini
  • A 2-inch piece of fresh ginger, peeled and finely grated
  • ¼ cup of freshly squeezed lemon juice (from 12 lemons)
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of pure maple syrup
  • 1 large clove of garlic, minced or pressed
  • 35 tablespoons of cold water
  • ½ teaspoon of sea salt
  • ¼ teaspoon of freshly cracked black pepper or more to taste

Instructions

  1. In a medium-sized bowl or liquid measuring cup, combine tahini, freshly grated ginger, freshly squeezed lemon juice, olive oil, maple syrup, and minced garlic. Use a whisk to mix these ingredients together until well combined.
  2. Gradually add cold water, one tablespoon at a time while whisking continuously until you reach your desired consistency.
  3. Whisk in sea salt and freshly cracked black pepper to taste. Adjust seasoning if necessary; set aside once done.
  4. In another large mixing bowl, add rinsed and drained chickpeas and mash about one-third using either potato masher or fork.
  5. To your mashed chickpeas, add finely grated carrots, diced red onion, chopped celery, and chopped fresh cilantro. Toss well using spatula until evenly distributed.
  6. Pour prepared Zesty Ginger Tahini Dressing over salad mixture and gently fold everything together to ensure every ingredient is well coated.
  7. Cover bowl with plastic wrap or lid; chill in refrigerator for at least 30 minutes before serving.
  8. After chilling, give one final toss; adjust seasoning if needed before serving chilled.
