  • 2 small gala or honeycrisp apples, chopped
  • 1/2 English cucumber, finely chopped
  • 1 shallot, quartered and thinly sliced
  • 8 pitted dates, chopped
  • 1/2 cup chopped walnuts or pecans
  • 1 1/2 cups grated Parmesan cheese
  • 1/4 cup lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup mayonnaise
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic, grated
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large bowl, combine sliced celery, chopped apples, finely chopped cucumber, quartered shallot, chopped dates, walnuts or pecans, and grated Parmesan cheese.
  2. In a separate bowl, whisk together lemon juice, Dijon mustard, olive oil, honey, grated garlic, kosher salt, and black pepper until smooth.
  3. Pour the dressing over the salad base and toss gently to coat all ingredients evenly.
  4. Serve immediately or refrigerate for 30 minutes to enhance flavors before serving.
