  • 1 granny smith apple (cubed)
  • ¼ red onion (finely chopped)
  • 25 g walnuts (chopped)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice (approx. 1/2 lemon)
  • 1 tablespoon water
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon mustard powder
  • Pinch salt

Instructions

  1. Soak the chopped red onion in cold water for at least 10 minutes to mellow its flavor.
  2. Toast the walnuts in a dry frying pan over medium heat for about 2-3 minutes until fragrant.
  3. In a small bowl, mix tahini, lemon juice, garlic powder, mustard powder, and salt to form a thick paste. Gradually add water to achieve your desired consistency.
  4. Rinse and drain the soaked onions; pat dry if necessary.
  5. Chop celery into bite-sized pieces and cube the apple while keeping its skin on.
  6. In a large bowl, combine celery, apple, rinsed onion, parsley, toasted walnuts, and dressing; mix well.
  7. Serve immediately for optimal crunch.
