  • 180 g butter (room temperature)
  • 150 g granulated sugar
  • 150 g dark brown sugar
  • 4 large eggs (room temperature)
  • 330 g all-purpose flour
  • 1 tbsp cornstarch
  • 1 tbsp ground cardamom
  • 1 tbsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • ½ tsp ground allspice
  • ½ tsp ground nutmeg
  • ¼ tsp ground black pepper
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 240 g sour cream (room temperature)
  • 60 g vegetable oil (e.g. canola oil)
  • 1 1/2 tsp vanilla extract
  • 200 g cream cheese (room temperature)
  • 280 g powdered sugar
  • 30 g dark brown sugar
  • 1/2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and spices.
  3. Beat butter with granulated and dark brown sugar until fluffy; add eggs one at a time.
  4. Mix in sour cream and vegetable oil, and vanilla extract until smooth.
  5. Gradually combine wet and dry ingredients until just mixed.
  6. Divide batter between pans and bake for about 30 minutes or until toothpick comes out clean.
  7. Cool in pans for ten minutes before transferring to a cooling rack.
  8. Prepare frosting by beating together butter and cream cheese until creamy, then gradually add powdered sugar and dark brown sugar until smooth.
  9. Once cakes are completely cool, spread frosting between layers first before covering the top and sides of the cake.
