  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered vegan gelatine
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened (heavy) cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Pistachio Toffee: ¼ cup white granulated sugar
  • 1 tablespoon water
  • 1 tablespoon chopped pistachios

Instructions

  1. In a saucepan, heat 1 cup of whole milk and steep chai tea bags with spices for about 5 minutes.
  2. Combine remaining milk with vegan gelatine in a bowl; let bloom for 5 minutes.
  3. Strain the spiced milk mixture, stir in sugar until dissolved, then mix in heavy cream and vanilla.
  4. Combine bloomed gelatine with the cream mixture while whisking continuously.
  5. Pour into serving glasses, cover, and refrigerate for at least four hours or until set.
  6. Prepare pistachio toffee by cooking sugar and water until golden brown; stir in chopped pistachios before pouring over panna cotta.
