  • 1 cup colby jack cheese, shredded (reserve 1/3 cup for topping)
  • 1/3 cup cottage cheese
  • 1/3 cup mayonnaise
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the zucchini thinly and pat dry with paper towels.
  3. In a mixing bowl, combine colby jack cheese (reserving 1/3 cup), cottage cheese, mayonnaise, egg, garlic powder, onion powder, and salt; mix well.
  4. Layer half of the zucchini in a baking dish, followed by half of the cheese mixture. Repeat the layers.
