Chermoula (North African Cilantro Parsley Sauce) is a vibrant and aromatic sauce that encapsulates the essence of North African cuisine.   • ¾ cup Fresh flat-leaf parsley (Leaves and stems)
  • ¾ cup Fresh cilantro (coriander) (Leaves and stems)
  • 23 Garlic cloves
  • 23 tbsp Extra-virgin olive oil
  • 1 Lemon zest (From 1 lemon)
  • 2 tbsp Lemon juice (From 1 lemon)
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • ½ tsp Smoked paprika
  • ½ tsp Red pepper flakes (Optional, use more or less)
  • Kosher salt and black pepper to taste

Instructions

  1. In a food processor, combine parsley, cilantro, garlic, olive oil, lemon zest, lemon juice, cumin, coriander, paprika, red pepper flakes (if using), salt, and pepper.
  2. Blend until you achieve a lightly chunky consistency.
  3. Taste and adjust seasoning as needed; add more olive oil for a looser texture.
  4. Serve at room temperature as a condiment or sauce.
