  • 6 tablespoons unsalted butter (cold, cubed)
  • 1 large egg (for brushing)
  • 8 ounces fresh cherries (pitted and halved)
  • Lemon juice and flour (for the cherry filling)

Instructions

  1. Prepare the almond cream by heating heavy cream, sugar, and corn starch in a saucepan until thickened. Stir in almond extract and butter.
  2. For the pie crust, mix flour, sugar, salt, and cold butter until crumbly. Add vinegar and ice water gradually to form a dough. Chill for an hour.
  3. Mix halved cherries with lemon juice and flour to coat.
  4. Roll out the dough into an 8-inch circle on parchment paper. Spread almond cream on the dough and top with cherry filling.
  5. Fold edges over the filling, brush with egg wash, sprinkle with sugar or sliced almonds.
