  • 1 cup panko breadcrumbs
  • ¼ cup sesame seeds
  • 1 large egg
  • Fry oil
  • 2 shallots
  • 34 cloves garlic
  • 2 tablespoons fresh grated ginger
  • 3 packets instant chicken ramen noodles
  • 15 ounces unsweetened coconut milk
  • 5 tablespoons white miso paste
  • 10 cups water
  • Fresh spinach leaves for garnish

Instructions

  1. Prepare the workstation by setting up a large skillet and a 6-quart sauce pot on the stovetop.
  2. In two shallow bowls, whisk an egg in one and combine panko breadcrumbs, sesame seeds, and salt in the other.
  3. Coat each chicken cutlet in the egg mixture, then dredge in the breadcrumb mix.
  4. Heat oil in the skillet and fry the cutlets until golden brown (about 3–4 minutes per side). Drain on paper towels.
  5. In the sauce pot, sauté sliced shallots, minced garlic, and grated ginger until softened. Add coconut milk, miso paste, water, and seasoning packets; bring to a boil.
  6. Stir in ramen noodles; cook for about 2–3 minutes until soft. Add fresh spinach just before serving.
  7. Slice chicken katsu into strips and serve over ramen with desired toppings.
