  • 1 tablespoon ghee or butter
  • 1 small onion, chopped
  • 34 garlic cloves, skin on
  • 2-inch piece ginger, chopped
  • 15 fresh cilantro stalks (stems & leaves separated)
  • 1 bay leaf
  • 12 Kashmiri dried chilies
  • 8 black peppercorns
  • 1 lb bone-in skinless chicken thighs and drumsticks
  • 3/4 teaspoon salt
  • 4 cups warm water
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon fresh cracked black pepper (to taste)
  • Optional: 1 tablespoon heavy cream or 1/4 cup milk

Instructions

  1. Heat ghee in a heavy-bottomed pot over medium heat.
  2. Sauté onion, garlic, ginger, cilantro stems, and whole spices for about a minute.
  3. Add chicken pieces to lightly sear for one minute on each side, then sprinkle salt and cover with water.
  4. Bring to a boil, reduce heat to low, and simmer covered for 35–45 minutes.
  5. Drain the shorba using a colander; separate chicken from broth and shred the meat.
  6. Return broth to pot; add shredded chicken, cilantro leaves, garam masala, black pepper, and optional cream. Simmer for another five minutes.
  7. Serve warm with lemon slices and scallions.
