  • 1 tsp chipotle chili powder
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp lime juice
  • ½ cup Greek yogurt (or dairy-free alternative)
  • ½ cup fresh cilantro leaves
  • 1 small garlic clove
  • Salt to taste
  • Lime wedges

Instructions

  1. Marinate chicken by combining olive oil, chipotle chili powder, garlic powder, cumin, salt, and pepper. Coat chicken thoroughly and let sit for 15–30 minutes.
  2. Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, garlic powder, cumin, salt, and pepper. Roast for 25–30 minutes until tender.
  3. In a skillet over medium-high heat, cook marinated chicken for 5–6 minutes per side until fully cooked. Let rest before slicing.
  4. Blend Greek yogurt (or dairy-free alternative), cilantro leaves, lime juice, garlic clove, olive oil, and salt until smooth.
  5. Warm black beans in a saucepan with cumin and lime juice.
  6. Assemble bowls: layer black beans at the bottom, add sweet potatoes and sliced chicken on top. Drizzle with sauce and garnish.
