Chocolate Mint Thumbprint Cookies are a delightful combination of rich chocolate and refreshing mint, designed to impress at any gathering. These soft cookies feature a fudgy center and a drizzle of chocolate, making them an irresistible treat for holidays, parties, or simply enjoying at home.

  • 1 cup butter (room temperature)
  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1½ cups white chocolate chips
  • ½ can sweetened condensed milk
  • ½ teaspoon mint extract

Instructions

  1. Preheat oven to 350°F (175°C). In a large mixing bowl, cream together butter and sugar until fluffy. Add eggs one at a time followed by vanilla.
  2. Gradually mix in cocoa powder, salt, baking soda, baking powder, and flour until well combined.
  3. Roll dough into 1-inch balls and place on a lined baking sheet. Press your thumb into each ball to form a well.
  4. Bake for 12 minutes; cool slightly.
  5. For the fudge filling, melt white chocolate chips with sweetened condensed milk over medium heat. Stir in mint extract and spoon into cookie wells.
  6. Drizzle melted chocolate almond bark over the cookies once set.
