  • 1 lb boneless skinless chicken breast (cut into cubes)
  • 4 cloves garlic (minced)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/2 teaspoon chili flakes
  • 3 tablespoons chopped cilantro leaves
  • 1/4 teaspoon salt
  • 1 pinch paprika
  • 4 tablespoons olive oil

Instructions

  1. Soak bamboo skewers in cold water for at least 30 minutes.
  2. In a mixing bowl, combine chicken, garlic, lime juice, chili flakes, cilantro, salt, and paprika. Stir well.
  3. Add olive oil to the mixture and coat evenly. Cover and marinate in the refrigerator for at least 30 minutes (preferably 2 hours).
  4. Thread three pieces of marinated chicken onto each soaked skewer.
  5. Preheat grill to medium-high heat. Grill skewers for about 10 minutes, turning occasionally and basting with remaining olive oil until fully cooked and lightly charred.
  6. Serve hot with lime wedges on the side.
